Abstract: | Karotenoid adalah salah satu pigmen alam yang bertanggung jawab terhadap warna kuning-oranye-merah pada banyak organisme. Karotenoid telah banyak digunakan tidak hanya sebagai pewarna alami makanan dan minuman, tetapi juga sangat penting bagi kesehatan. Dengan metode penangkapan singlet molecular oxygen dan peroxyl radicals, karotenoid memiliki aktivitas biologis yang berhubungan dengan aktivitas antioksidan. Konsumsi buah-buahan dan sayur-sayuran yang kaya karotenoid akan memperkuat sistem imun tubuh, menurunkan resiko penyakit degeneratif seperti kanker, mencegah resiko adanya penyakit kardiovaskular, mencegah penurunan ketajaman mata, dan mengurangi resiko katarak. Namun, kestabilan struktur pigmen karotenoid terganggu dengan adanya cahaya, suhu, dan pH yang ektrim yang melibatkan oksigen. Enkapsulasi telah menjadi cara instan dalam mengatasi masalah ini, membantu melindungi pigmen karotenoid dibawah kondisi yang tepat, utamanya ketika diaplikasikan ke tubuh. Untuk tujuan enkapsulasi, desain optimum kapsul, pemilihan proses dan kondisi enkapsulasi terbaik merupakan faktor penting yang harus dipertimbangkan. Carotenoid is one of the natural pigments which responsible for yellow-orange-red color in many organisms. It has been widely used not only as a natural colorant in foods and beverages, but also very important to health. By scavenging singlet molecular oxygen and peroxyl radicals, carotenoid plays important biologic activities associated with antioxidant properties. A diet rich in fruits and vegetables full of carotenoid content will strengthening the immune system, decreasing the risk of degenerative illnesses such as cancer, preventing the risk of cardiovascular disease, preventing macular degeneration, and reducing the risk of cataracts. However, carotenoid pigments are unstable triggered by light, temperature and or extreme pH in the presence of oxygen. Encapsulation has become an important tool to overcome the instability problem, helping to protect those carotenoid pigments under the desired conditions, especially when ingested in the body. For the encapsulation purposes, an optimized design of capsules, choosing the best encapsulation process and conditions are important factors we have to consider. |
