Abstract: | Umbi bit merupakan komoditas pangan yang baik untuk kesehatan. Bit memiliki kandungan serat pangan, kaya akan antioksidan, serta berbagai jenis vitamin. Beetroot leather merupakan manisan kering yang berbentuk lapisan tipis dengan cita rasa yang khas. Teknik pembuatan beetroot leather dengan bahan pengikat CMC (Carboxyl Methyl Cellulose) dan karagenan dengan jenis dan konsentrasi tertentu mendapatkan hasil beetroot leather yang memiliki tekstur liat padat serta tingkat plastisitas yang baik. Berdasarkan manfaat dan kandungan dari bit serta penambahan bahan pengikat, penelitian ini bertujuan untuk mengkarakterisasi fisikokimia dan organoleptik beetroot leather dari berbagai ragam konsentrasi dan jenis bahan pengikat. Rancangan penelitian menggunakan RAK (Rancangan Acak Kelompok) dengan 6 perlakuan dan 4 kali pengulangan. CMC dinyatakan sebagai faktor X dan karagenan sebagai faktor Y dengan masing-masing tingkat konsentrasi (0,1%; 0,3%; 0,5%). Beetroot leather diuji secara fisik, kimia, umur simpan dan organoleptik. Uji fisik meliputi uji warna dan tekstur. Uji kimia meliputi kadar air, kadar abu, kapasitas antioksidan da uji total gula. Data hasil pengamatan sifat fisik dan kimia diolah menggunakan metode sidik ragam ANOVA (Analysis of Variance) (α=5%), dan diuji lanjut menggunakan DMRT. Sedangkan organoleptik menggunakan skala Likert. Perlakuan terbaik terdapat pada X1Y1 (CMC 0,1%) yaitu memiliki kandungan fisikokimia yang baik dengan tingkat hardness 173,13g, defformation 2,07mm, warna dark purplish grey, kadar air 15,72%, kadar abu 5,23%, total gula 67,82%, dan antioksidan 42,06%. Beetroot leather mudah dikonsumsi serta tingkat kekerasannya paling baik dengan kandungan kadar air yang tidak terlalu tinggi, sehingga tidak mudah rusak. Pada uji organoleptik menunjukan hasil bahwa responden tidak dapat membedakan keenam perlakuan dan rata-rata menyatakan agak suka - suka terhadap semua produk beetroot leather. Beetroot is a food commodity that has good health benefits. Beets contain dietary fiber and are rich in antioxidants and vitamins. Beetroot leather or fruit leather is a dry confectionery in the form of a thin layer with a distinctive taste from the tubers or fruit used. The beetroot leather with CMC (Carboxyl Methyl Cellulose) or carrageenan as a binder resulted in beetroot leather with a dense clay texture and a good level of plasticity. Based on the benefits and content of beetroot and the addition of CMC and carrageenan, this study aims to characterize beetroot leather's physicochemical and organoleptic characteristics from various concentrations and types of thickening agents. The research design used RAK (Randomized Block Design) with 6 treatments and 4 repetitions. CMC was expressed as factor X and carrageenan as factor Y with each concentration level (0.1%; 0.3%; 0.5%). Beetroot leather was tested physically, chemically, and organoleptically. Physical tests include color and texture tests. Chemical tests include water, ash, antioxidant capacity, total sugar, and storage. The data from observing physical and chemical properties were processed using the ANOVA (Analysis of Variance) method of variance (α=5%) and further tested using DMRT. While organoleptic using the Likert scale. The best treatment was found in X1Y1 (CMC 0.1%), which has good physicochemical content with a hardness level of 173.13g, deformation 2.07mm, dark purplish gray color, water content 15.72%, ash content 5.23%, total sugar 67.82%, and antioxidants 42.06%. Beetroot leather is easy to consume and has the best hardness level with a water content that is not too high, so it is not easily damaged. In the organoleptic test, the results showed that the respondents could not distinguish between the six treatments and on average said they liked all the beetroot leather products. |
