Abstract: Bawang merah adalah salah satu tanaman holtikultura yang rentan mengalami kerusakan apabila penanganan pasca panen tidak dilakukan dengan baik. Penyebab kerusakan bisa terjadi akibat pengaruh fisik, kimiawi, mikrobiologi, dan fisiologi. Permasalahan yang sering dijumpai selama penanganan pasca panen bawang merah, dimulai dari kerusakan secara fisik sehingga terjadi susut bobot yang menyebabkan harga bawang merah menjadi fluktuatif. Penanganan pasca panen yang diterapkan oleh petani bawang merah di Kelurahan Malumbi masih menggunakan cara tradisional yang selama ini biasa digunakan tanpa berpegang pada pedoman yang ada. Penanganan pasca panen bawang merah yang sesuai standar operasional prosedur (SOP) belum dikenal oleh petani bawang merah di Kelurahan Malumbi. Tujuan penelitian ini adalah untuk mengetahui kesesuaian penanganan pasca panen bawang merah di Kelurahan Malumbi dengan penanganan pasca panen bawang merah menurut standar operasional prosedur (SOP). Penelitian ini bersifat kualitatif dengan teknik pengumpulan data berupa observasi,wawancara, dokumentasi, kajian pustaka dan analisis laboratorium. Hasil penelitian ini membuktikan penanganan pasca panen bawang merah yang diterapkan oleh petani di Kelurahan Malumbi belum sepenuhnya sesuai dengan penanganan pasca panen bawang merah yang diatur dalam standar operasional prosedur (SOP) yang berdampak pada ketidaksesuaiannya mutu bawang merah di Kelurahan Malumbi dengan mutu bawang merah dalam standar nasional indonesia (SNI).
Shallots are one of the horticultural crops that are prone to damage if post-harvest handling is not carried out properly. The cause of damage can occur due to physical, chemical, microbiological, and physiological influences. Problems that are often encountered during the post-harvest handling of shallots, starting from physical damage resulting in weight loss which causes the price of shallots to fluctuate. Post-harvest handling applied by shallot farmers in Malumbi Village still uses traditional methods that have been used so far without adhering to existing guidelines. The post -harvest handling of shallots according to standard operating procedures (SOP) is not yet known by shallot farmers in Malumbi Village. The purpose of this study was to determine the suitability of post-harvest handling of shallots in Malumbi Village with postharvest handling of shallots according to standard operating procedures (SOP). This research is qualitative in nature with data collection techniques in the form of observation, interviews, documentation, literature review and laboratory analysis. The results of this study prove that the post-harvest handling of shallots applied by farmers in the Malumbi Sub-district is not fully in accordance with the post-harvest handling of shallots regulated in the standard operating procedure (SOP) which has an impact on the incompatibility of the quality of shallots in the Malumbi Sub-district with the quality of shallots in the Indonesian National Standard (SNI).
