Abstract: | Buah mangga termasuk buah musiman yang tidak tersedia sepanjang tahun, buah ini memiliki banyak varietas dan karakteristik masing -masing. Karakteristik buah mangga pasca panen mempengaruhi nilai ekonomi dari buah tersebut. Penelitian dimaksudkan untuk mengetahui total asam tertitrasi (TAT), kandungan vitamin C, padatan terlarut (PTT) serta kualitas fisik buah (warna dan kelunakan). Penelitian dilaksanakan dengan mini percobaan untuk membuktikan karakteristik buah mangga varietas Indramayu pada dua level kematangan dengan metode percobaan menggunakan acuan penelitian terdahulu. TAT dan vitamin C pada buah mangga yang belum matang lebih tinggi disbanding yang belum matang. Sedangkan buah yang masak ditandai dengan kulit buah mangga Indramayu yang cenderung menguning diikuti dengan fisik buah yang lunak. Hal ini tidak terlepas dari degradasi klorofil pada dinding sel pasca panen, yang menyebabkan kulit buah mangga Indramayu berubah warna. Kontrol TAT, vitamin C, PTT penting untuk dilakukan secara berkala, karena masyarakat modern cenderung mengutamakan kualitas dari suatu buah. Sedangkan kualitas fisik digunakan sebagai indicator penanganan pasca panen, tempat penyimpanan, serta penanganan distribusi yang sesuai dengan tingkat kemasakan buah Mango is a seasonal fruit that is not available throughout the year. This fruit has many varieties and characteristics of each. Post-harvest characteristics of mangoes affect the economic value of the fruit. The purpose of this study was to determine the total titrated acid (TAT), vitamin C content, dissolved solids (PTT), and the physical quality of the fruit (color and softness). The research was carried out with a mini-experiment to prove the characteristics of the Indramayu variety mango at two levels of maturity with the experimental method using the reference of previous studies. TAT and vitamin C in unripe mangoes are higher than in unripe mangoes. Meanwhile, ripe fruit is indicated by the skin of the Indramayu mango, which tends to turn yellow, followed by a soft physical fruit. It is inseparable from the degradation of chlorophyll in post-harvest cell walls, which causes the skin of the Indramayu mango to change color. Control of TAT, vitamin C, and PTT is important to be done regularly because modern society tends to prioritize the quality of fruit. In comparison, the physical quality is used as an indicator of post -harvest handling, storage, and distribution handling by the level of fruit maturity. |
