Abstract: Garam kuwu adalah garam yang berasal dari Desa Kuwu, Kecamatan Kradenan, Kabupaten Grobogan, Provinsi Jawa Tengah yang bersumber dari lumpur vulkanik. Harga garam kuwu Rp 15.000 – Rp 3.000,00 per kg. Olahan garam bambu menjadi solusi untuk meningkatkan nilai ekonomi dari garam kuwu. Metode yang digunakan dalam penelitian ini; pembakaran garam bambu, pelelehan garam bambu, dan analisa garam. Hasil penelitian didapatkan garam bambu dengan warna merah kecoklatan, teksturnya keras, dan memiliki rasa asin dan manis. Garam bambu memiliki manfaat dalam bidang pangan sebagai bumbu, dalam bidang kesehatan dan farmasi sebagai antibakterial. Perlu penelitian lebih lanjut untuk proses pengolahan dan analisa kandungan mineral pada garam bambu dari garam kuwu. Kata kunci: garam, garam bambu, kuwu. The price of Kuwu salt is IDR 15,000 – IDR 3,000.00 per kg. Processed bamboo salt is a solution to increase the economic value of kuwu salt. The methods used in this research are: bamboo salt burning, bamboo salt melting, and salt analysis. The results showed that bamboo salt has a red-brown color, has a hard texture, and has a salty and sweet taste. Bamboo salt has benefits in the food sector as a spice, in the health sector and in pharmaceuticals as an antibacterial.
