Abstract: | Singkong (Manihot esculenta crantz), yang dikenal sebagai ketela pohon atau ubi kayu pohon termasuk tanaman musiman. Menurut Rukmana (1997), singkong merupakan salah satu jenis hasil tanaman yang mudah rusak jika tidak diberi penanganan khusus. Berdasarkan hal tersebut perlu penelitian dengan judul pengaruh pengupasan dan frekuensi penggantian air rendaman terhadap lama penyimpanan ubi singkong. Tujuan penelitian ini adalah untuk menentukan kombinasi terbaik antara macam pengupasan dan frekuensi penggantian air rendaman yang menghasilkan lama penyimpanan. Penelitian dilakukan pada bulan April-Mei 2022. Adapun metode penelitian ini adalah Rancangan Acak Kelompok (RAK) dengan 12 macam perlakuan, pengupasan ada 3 macam yaitu tanpa dikupas, dikupas kulit luar, dikupas kulit luar dan kulit dalam. Perendaman ada 4 macam , yaitu tanpa direndam, direndam dengan penggantian air 1x sehari, direndam dengan penggantian air 2 hari 1x, dan penggantian air rendaman 3 hari 1X. Hasil dianalisis dengan sidik ragam, dan uji DMRT (Duncan Multiple Range Test) yang ada di aplikasi SAS. Hasil penelitian menunjukkan bahwa perlakuan perendaman singkong di dalam air tidak memiliki masa simpan yang lebih lama dibanding masa simpan singkong yang tidak direndam dengan air. Perlakuan pengupasan kulit dalam dan kulit luar singkong dengan frekuensi penggantian air 1 hari sekali tidak memiliki masa simpan paling lama. Masa simpan paling lama ternyata diperoleh dari perlakuan tanpa dikupas tanpa direndam dalam air, yaitu 14 hari dengan kadar pati 38,4%. Cassava (Manihot esculenta crantz), known as cassava or cassava tree, is a seasonal plant. According to Rukmana (1997), cassava is a type of plant that is easily damaged if it is not given special handling. Based on this, research is needed with the title the effect of peeling and the frequency of changing the soaking water on the storage time of cassava tubers. The aim of this research is to determine the best combination between the type of stripping and the frequency of changing the soaking water which results in long storage time. The research was conducted in April-May 2022. The research method was a Randomized Group Design (RAK) with 12 types of treatment, there are 3 types of peeling, namely without peeling, peeling the outer skin, peeling the outer skin and inner skin. There are 4 types of soaking, namely without soaking, soaked with water changes once a day, soaked with water changes once a day 2 days, and soaked with 1x water changes every 3 days. The results were analyzed using variance tests and the DMRT (Duncan Multiple Range Test) test in the SAS application. The results of the research showed that the treatment of soaking cassava in water did not have a longer shelf life than cassava that was not soaked in water. The treatment of peeling the inner and outer skin of cassava with a frequency of changing the water once a day does not have the longest shelf life. The longest shelf life was obtained from the treatment without peeling without soaking in water, namely 14 days with a starch content of 38.4%. |
